Mmmm, pizza!

Another one of my “go-to” favs, which I was given from one of my friends, is Roasted Vegetable Pizza:

You will need the following ingredients:

• 1 sweet potato • 1 red onion • 1 small bunch of asparagus • 1 small package of mushrooms (whatever kind you like) • 1 bag of Asiago/Parmesan cheese blend (or whatever cheese you like) • 1 package whole wheat pizza dough • olive oil

Cut sweet potato into 1/4-1/2 inch chunks, and cut red onion into bite size pieces. Place both on a cookie sheet and drizzle with olive oil. Roast for 15 minutes @ 400 degrees. While potato and onion are cooking, slice mushrooms into bite size chunks and cut asparagus into 1/2 inch pieces. After potato and onion have cooked for 5 minutes, add your mushrooms and asparagus to your cookie sheet and drizzle with olive oil. Roast for an additional 10 minutes @ 400 degrees. Spread your pizza crust on an oiled pizza pan. After veggies are roasted, prebake your pizza crust until golden, then top crust with roasted veggies, then your cheese blend. Bake for 7-10 minutes @ 400 degrees until cheese is melted.
